I`ve mentioned already how great cashew milk could be. Good alternative and very easy to make, not to mention how excellent source of minerals are cashews, wonderful for bone health and contain healthy fats that support cardiovascular health.
Still, we cant really get it in the supermarket so I decided to make it at home. Super easy! Soak 1/2 cup of cashews over night (1/2 cup = 125 ml) with a pinch of salt.
In the morning all you have to is drain cashews, rinse them with water and put in a blender with 375 ml water (3 x 1/2 cup), 1 tsp honey (5 ml) and 1/4 tsp vanilla. Blend well and you can use it immediately. I find that version very creamy, smooth and rich, but you can also pour it through a bag/sieve and squeeze it fairly for few times to get as much liquid as you can. Keep it in the refrigerator for 2 to 3 days.
I used it for a smoothie, but would be very interesting to see how this mylk can be steamed and frothed. The consistence seems to be perfect! Well, I will try and let you know how I`ve manage it. Have a wonderful day! xox
